The smell of freshly baked bread wafts through the building and mixes with the scent of coffee and other delights being prepared on the premises at the Suffolk Food Hall in Wherstead. If that does not excite the senses enough, step outside and look at the view towards the stunning Orwell Bridge and the beautiful countryside beyond. Oliver Paul is director of a business that brings together all that is great about the region’s food and drink and his passion for locally sourced produce is evident as he talks about his plans for the future.

What makes your business different?

Our little corner of the Area of Outstanding Beauty has stunning views down the River Orwell, and yet is easily accessible from the A12 / A14.

What new developments have you got planned?

The Cookhouse project will bring further artisan producers on-site, adding more originality and interaction with local food production. The new building will also allow everyone in the restaurant to have a river view, host a cookery school and provide rooms for functions and private dining.

What are the most popular products that you sell?

The traditional staples; the baker, the butcher, the fishmonger, delicatessen’s fare


Have you got a ‘funniest/most memorable moment’ relating to your business?

Chef Wan, from Malaysia, filming a Rick Stein-esk ‘gastronomic tour of the UK’, with his quirky comments and bi-lingual jokes!

What three things do you like most about living/working in Suffolk?

1. The unique work/live balance that is achievable; blending the two whilst take the best of both

2. The unrivalled diversity in landscape; leading to a large array of foods. The estuaries and coast providing fish, pastures stretching away from the rivers home to native cattle and sheep breeds, the favourable climate for orchards and vegetables and the flatter country being the bread basket.

3. Revelling in the history; from Vikings through to the forefathers of the US and the maritime history

Fish and chips on the coast

For my pleasure, I completed a Masters in Environmental Geochemistry!
